i'd argue that you're shooting yourself in the foot with your requirements. A merchant going way out of their way to avoid being found is a huge red flag for any conscientious buyer.

I'm selling an optional monthly subscription for a completely virtual product that they can cancel at any time. Why do they need to know my full legal name, personal phone number, and home street address for this? Plenty of people on Patreon are anonymous to their audience. Am I really going to have to use Patreon for this? It seems pretty ridiculous but they do have web hook support so it's not impossible, but obviously a proper Merchant of Record would be a much more suitable fit

Right there is the point. Money is exchanging hands. People are funny about their money - they don't want to hand it out to someone they can't trust, and a merchant who goes way, way out of their way to hide their identity does not encourage trust.

That's my 0.02 Euros, anyway.

But I can literally use Patreon to do this (accept money to provide benefits on my website while being anonymous). I could set up a Patreon under a pseudonym, link it with my website, accept payments, integrate with my database via Patreon's WebHooks on successful subscription, and provide accounts on my web site with benefits when they subscribe. So this is clearly possible and tons of people do this already
